This is my first All-Trac and I got it this Saturday. The car is a 1988 st165. I’m located in Sacramento, California and the car has some issues and I thought this would be a great platform to help alleviate some of them.

The dome and map lights, along with sunroof don’t work and I’m puzzled, and well as some minor engine work

Welcome! And congrats on becoming an alltrac owner!
How good are you at electrical? Those things all share in common that they obviously go above your head. I would start with gaining access to the plugs for each part and seeing what's missing when you try to operate it, power or ground. Once you figure that out you can see if they share some common like a fuse. Orrrrr being it's an older car don't rule out the possibility of mice damage with maybe the wiring going to the roof being chewed through. Hope this helps!
